Buttermilk Peach or Nectarine Cobbler

Ingredients:

  • 3 Del Monte® Peaches, pitted and sliced, or
  • 4 Del Monte® Nectarines, pitted and sliced
  • 1⅓ cups sugar, divided
  • 1 cup all purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. fine sea salt
  • 1 cup buttermilk
  • 4 tbsp. butter, melted, plus more for greasing pan
  • vanilla ice cream, for serving

Instructions:

Preheat oven to 375℉. Generously butter a 9” square baking dish.

In prepared baking dish, toss peaches or nectarines with ⅓ cup sugar. Place in oven and bake until fruit starts to exude juice, 25-30 minutes.

In a medium bowl whisk to combine flour, remaining 1 cup sugar, baking powder, baking soda, and salt. Whisk in buttermilk and butter until smooth.

Pour batter over fruit in baking dish and return to oven to bake until golden brown, about 40 minutes.

Serve warm with ice cream.
