Steak & Green Bean Fajitas with Fresh Del Monte® Avocado

Ingredients:

  • 1 1/4 lb. Skirt Steak
  • 1 tsp., divided Fine Sea Salt
  • 1 tsp. Chipotle Chile Powder
  • 1 tsp. Ground Cumin
  • 2 tbsp. Vegetable Oil
  • 1 Medium Yellow Onion, thinly sliced
  • 1 Del Monte® Red Bell Pepper, seeded & thinly sliced
  • 1 large Del Monte® Avocado, pitted & sliced
  • 14.5 oz. can Green Beans, drained
  • 8 White Corn Tortillas, warmed

Instructions:

  1. Rub steak all over with ½ teaspoon salt, chile powder, and cumin; set aside.
  2. Prepare a hot charcoal grill fire, preheat a gas grill over high heat with the lid closed for 10 minutes, or heat a large cast-iron skillet or griddle over medium-high heat until hot. Cook steak, turning occasionally, until well browned and cooked to desired level of doneness, 1½ minutes per side for rare to medium-rare or up to 3 minutes per side for well-done. Transfer to a cutting board to rest.
  3. Meanwhile, in a large skillet, heat oil over medium-high heat. Add onion and pepper and sauté until softened and lightly charred, about 5 minutes. Add green beans and cook 3 minutes until heated through. Sprinkle with remaining ½ teaspoon salt and toss well.
  4. Thinly slice steak across the grain. Serve steak with vegetables, avocado, and tortillas.
